HOW TO APPLY
- Applicants must choose one of six featured opportunity cut options – Clod/Petite Tender, Outside Skirt, Flank , Inside Skirt, Bottom Sirloin Tri-Tip and Chuck Roll.
- Applicants must prepare and submit a recipe using the one chosen opportunity cut as the main ingredient in an entrée dish.
- Applicants must also provide a 3-minute video introducing themselves, their inspiration for the dish, brief about the dish including the cut utilized, how it is utilized and preparation method. (Please see guideline video). The video must be in MP4 format only. The video must be less than 10MB and uploaded to WeTransfer and the link submitted through the application form. See below for steps on how to upload a video to WeTransfer.
- All recipes must be in a standardized format (grams, kilograms, milliliters and liters only).
- Recipes must be created for the equivalent of 4 servings.
- All recipes must detail the steps of preparation and cooking clearly in an easily understandable format.
- Recipes must be broken down into preparation and service components and must clearly outline how the beef will be held until service.
- Participants must also specify all cooking equipment required for the preparation of the dish and must reference this cooking equipment in the recipe.
- The dish should be able to be completed within the stipulated time of the finals – 90 minutes (15 minutes for basic mise en place + 75 minutes for prep & cooking)
APPLICANT CRITERIA
- Applicants must have a minimum of 1 years’ work experience in a professional kitchen or be currently enrolled in a culinary program at a Canadian college.
- Applicants must currently be living and working or studying in Canada.
- Applicants must legally be able to work or study in Canada and must be either a Canadian Citizen, Permanent Resident or a holder of a valid Work or Study Permit.
- Be 19 years of age or older.
- Fully complete and submit the application prior to the deadline.
- Be available to travel to Calgary from March 25 – 27, 2025 to compete in the final round should they be selected, which will take place on March 26, 2025.

All application submissions will be reviewed by a panel of culinary experts from Canada Beef. 18 shortlisted recipes will be trialed by the panel of culinary experts at the Canadian Beef Centre of Excellence to select the grand finalists.
